vegetables for the ultimate lunch. Plus, chickpeas are
protein-packed and budget friendly. Build this sandwich up or down
to your liking — ready, set, assemble!

Vegan Chickpea Salad Sandwiches
Ingredients
1 — 15 oz. can chickpeas, rinsed & drained
2 — (10-12 inch) stalks of celery, finely chopped
1/4 cup carrots, finely chopped
1/4 cup purple onion, finely chopped
2 Tbs vegan mayo
2 Tbs Dijon Mustard
1 clove garlic minced
Salt & pepper to taste
Whole grain bread
Sandwich topping options:
Kale
Butter lettuce
Spinach
Sprouts
Avocado
Tomato
Purple onion
Radishes
Directions
1. With a fork, mash chickpeas in a medium bowl.
2. Add the rest of the ingredients and mix. Add salt and pepper to taste.
3. Scoop about 1/3 of the mixture onto a slice of whole grain bread, top with which ever toppings you prefer, cover with another slice of bread and enjoy
