Overnight oats are the ultimate breakfast hack — prep them the night before, and wake up to a creamy, satisfying meal that's ready to go! These pumpkin-spiced overnight oats are packed full of fiber and protein for nourishment that will leave you feeling great. Simple, easy-to-make, healthy, and oh-so-tasty — what’s not to love?
Ingredients
· 2 1/2 cups unsweetened plain almond milk
· 2 cups old-fashioned rolled oats
· 1 cup pumpkin puree
· 2 tablespoons pure maple syrup
· 2 tablespoons flaxseed meal or chia seeds
· 4 pitted dates, chopped
· 1 tablespoon espresso powder
· 1 teaspoon pumpkin pie spice, plus more for sprinkling
· 1 teaspoon vanilla extract
· 1/2 teaspoon salt
· 1 cup whole-milk plain strained (Greek-style) yogurt
Directions
Combine almond milk, oats, pumpkin, maple syrup, flaxseed meal, (or chia seeds), dates, espresso powder, pumpkin pie spice, vanilla, and salt in a blender; process until smooth, about 30 seconds.
Then divide the mixture evenly among four (8-oz.) jars.
Cover and refrigerate until thickened, about eight hours.
Just before serving, top with yogurt and sprinkle with pumpkin pie spice and pecans if you like!
