Mocha Truffles

Your new favorite dessert

Great for dessert or to snack on anytime, our Mocha Truffles are sure to be a hit whenever they’re made. Children, adults, it doesn’t matter who you are, these treats are hard to turn down. Best of all? They’re a breeze to make and there will be plenty leftover to have in the days ahead (unless you decide to chow down right away, which we completely understand.)

Ingredients:

  • 3 oz. (100g) of dark chocolate, 70-80% 
  • 2 tbsp. instant coffee
  • 2 tbsp. coconut sugar
  • 2 tbsp. cocoa powder, for dusting
  • 2 tbsp. almond butter
  • 1/3 cup (80ml) of full-fat coconut milk 
  • A pinch of sea salt

Directions:

Place the chocolate in a bowl and heat in a microwave. Not too long though! Just until the chocolate starts to melt. 

In a small pot, heat the coconut milk, along with the instant coffee and sugar until it reaches a boil. Next, whisk in the almond butter and add a pinch of sea salt. Stir until smooth.

Pour the hot coconut milk mixture into the bowl with the chocolate and stir gently and slowly until well combined. 

Fix a layer of clingfilm right over the top of the mixture, this prevents a skin from forming. Chill in the fridge for about 2 hours, until firm.

 Lightly dust a clean surface with cacao powder and roll a spoonful of the chocolate in it. Shape the powder into balls and serve at room temperature. Store in the fridge.
