ZUCCHINI WAFFLES

INGREDIENTS

2 small zucchini

1 1/2 cups almond meal
1/4 cup tapioca/arrowroot flour 1 tbs coconut flour

1 tsp baking powder 2 eggs, separated 3/4 cup almond milk

2 tbs coconut oil, melted
pinch salt and cracked black pepper

You will need a waffle iron to make this recipe

METHOD

Grate zucchini and squeeze out excess water. You can do this by placing zucchini into some paper towel or clean kitchen cloth and ringing out excess water.

Add grated zucchini, almond meal, arrowroot flour, coconut flour, baking powder, almond milk, coconut oil, egg yolks and salt and pepper into a bowl. Whisk together until well combined.

In a separate bowl whisk egg whites to form soft peaks. Fold whipped egg whites carefully into the batter.

Heat and grease waffle iron. When ready to use, spoon batter into iron and follow cooking directions for your machine.

These waffles are great with some paoched eggs and bacon.
