Smashed Avo With Eggs on Toast feature image

INGREDIENTS

  • 3 large Eggs
  • ⅓ medium Avocado
  • ¼ small Red Onion
  • ½ medium Capsicum
  • ½ medium Zucchini
  • 1 wedge Lemon
  • 1 serve Salt and Pepper
  • 1 serve Extra Virgin Olive Oil
  • 3 cafe slices Mixed Grain Bread

METHOD

Step 1

Place the eggs in a saucepan of cold water over medium heat.

Step 2

Bring to a gentle simmer.

Step 3

Simmer for 4 minutes for soft-boiled eggs, 5 minutes semi-firm yolks and hard whites and 8 minutes for hard-boiled eggs.

Step 4

Use a slotted spoon to remove the eggs from the water, then run under cold water and carefully peel.

Step 5

Spray some olive oil in a frypan and place over medium heat.

Step 6

Roughly chop the zucchini, capsicum and red onion and add to the pan.

Step 7

Sauté for approximately 5 minutes, tossing regularly.

Step 8

Place the avocado in a bowl, add a squeeze of lemon and salt and pepper to taste, then mash with a fork.

Step 9

Toast the bread and serve with eggs, veg and smashed avo.
