Quick Oatmeal Cookies feature image

INGREDIENTS

  • 1 cup Rolled Oats
  • 1 tbsp Ground Flaxseed
  • 4 tbsp Water
  • 3 tsp Crushed Macadamias
  • 3 tsp Crushed Walnuts
  • 1 tbsp Maple Syrup
  • 5 tbsp Reduced Fat Milk (of your choice)
  • 3 medium Plum
  • 3 medium Mandarin

METHOD

Step 1

Add the ground flaxseed and water together and stir well. Allow to sit and thicken.

Step 2

Meanwhile, add the rolled oats, crushed macadamias, and crushed walnuts to a bowl. Stir to combine.

Step 3

Add the maple syrup and milk to the bowl and stir again.

Step 4

Add the flax-egg to the bowl and fold in.

Step 5

Take a microwave safe plate and line with baking paper. Arrange 3 mounds of oat mixture on the plate, around 1cm thick each.

Step 6

Place in the microwave for 5 minutes, then remove and allow to cool.

Step 7

Repeat for the rest of the mixture, then divide into 3 serves and enjoy each with a plum and a mandarin on the side!
