Prawn Salad

INGREDIENTS

  • 300 g Cooked and Peeled Prawns
  • ½ medium Avocado
  • 4 cup Spinach
  • 1 medium Mango
  • 2 tsp Sweet Chilli Sauce
  • 2 tbsp Reduced Fat Coconut Milk
  • 1 tbsp Lime Juice
  • 360 g Cooked Wholemeal Pasta

METHOD

Step 1

Cook the pasta according to packet instructions, then set to the side.

Step 2

Take the avocado mango and dice into small chunks.

Step 3

In a small bowl, mix together the sweet chilli sauce, coconut milk, and lime juice.

Step 4

Take two large bowls, and divide all of the ingredients evenly between them. Toss to combine.

Step 5

Finish with a drizzle of dressing, then dig in!
