Mediterranean Lamb Pizza

INGREDIENTS
- 520 g Lean Ground Lamb
- 5 medium Tomato
- 150 g Tomato Paste
- 2 medium Red Onion
- 2½ clove Garlic
- 8 whole Kalamata Olives
- 1 serve Extra Virgin Olive Oil
- 2 cup Baby Spinach
- 100 g Low Fat Plain Yoghurt
- ½ whole Lemon
- 4 large Wholemeal Pita Bread
- 1⅓ small Avocado
METHOD
Step 1
Preheat oven to 175°C/350°F and line a baking sheet with baking paper.
Step 2
Heat a large non-stick fry pan over medium heat and spray with olive oil.
Step 3
Mince the garlic, and slice the tomatoes, red onion, and olives.
Step 4
Add the minced garlic and ground lamb to the fry pan and cook for 5 to 7 minutes or until brown.
Step 5
Stir frequently using a wooden spoon to break up the meat.
Step 6
Season with salt and pepper if desired, and drain off any excess liquid.
Step 7
Lay the pita breads out and spread with tomato paste.
Step 8
Top with the spinach, tomato, onion, lamb and sliced olives.
Step 9
Place the pizzas on the baking tray and cook for 8 to 10 minutes or until the edges are golden brown.
Step 10
Meanwhile, add the yoghurt, the 1/2 clove of minced garlic and lemon juice in a small bowl and whisk until well combined.
Step 11
Remove the pizzas from the oven, top with yoghurt sauce and enjoy!
