CHOC CHIP PROTEIN MUG CAKE feature image

INGREDIENTS

1 medium sized ripe banana, mashed 2 eggs
1 tsp vanilla paste or essence

4 tbs almond meal
2 scoops protein powder of your choice (whey, hemp, pea etc.) 1 tbs milk of your choice (dairy, almond, coconut etc.)
2 tbs dark chocolate chips (72% or higher)

METHOD

In a mixing bowl whisk together mashed banana, eggs and vanilla.

Mix in almond meal, protein powder and milk. If mixture is too thick add a little extra milk until you reach a cake batter consistency. Fold through chocolate chips.

Divide batter evenly between two standard size coffee mugs.

Place in microwave and cook for 90 seconds or until cake is cooked and springs back to touch.

Serve with a spoonful of yoghurt or a scoop of ice cream for an extra treat.
