Chicken San Choy Bow

INGREDIENTS
- 220 g Chicken Mince
- 3½ cup Cooked Brown Rice
- 7 tbsp Raw Peanuts
- ½ whole Brown Onion
- 2 clove Garlic
- 1 small knob Ginger
- 1 medium Carrot
- 1 medium Capsicum
- 1 cup Mushrooms
- ½ cup Soy Sauce
- 8 whole Cos Lettuce Leaves
METHOD
Step 1
Cook the rice as per packet instructions.
Step 2
Mince the garlic and finely dice the onion, ginger and vegetables.
Step 3
Spray some olive oil in a frypan, then place over a medium heat and add the onion.
Step 4
When the onion starts to sweat, add the garlic and ginger and sauté for a further 2-3 minutes.
Step 5
Add the mince and break it up with a wooden spoon, then add the remainder of the vegetables and stir.
Step 6
When the chicken is cooked through (approximately 10 minutes), add the soy sauce to the pan and mix well. Remove the pan from the heat and place the mixture in a large bowl.
Step 7
Roughly chop the peanuts.
Step 8
Spoon the mixture and rice into lettuce leaf cups, drizzle more soy sauce over the top and garnish with chopped peanuts, then enjoy!
