Carrot Cake Oat Pudding

INGREDIENTS

  • ½ cup Rolled Oats
  • 1½ tsp Natural Peanut Butter
  • 1 large Carrot
  • ½ cup Water
  • 1 tbsp Vanilla Essence
  • ½ tsp Ground Cinnamon
  • ½ tsp Nutmeg

METHOD

Step 1

Grate the carrot into a small bowl, then add all the ingredients, including the oats, peanut butter, water, vanilla essence, cinnamon and nutmeg.

Step 2

Stir well to combine.

Step 3

Cover the bowl with a small plate or lid, then place it in the fridge to set.

Step 4

Leave for at least 5 hours, or overnight, then once you're feeling hungry remove it from the fridge and dig in!
