Black Bean Mug Cake

INGREDIENTS

  • 5 tbsp Canned Black Beans
  • 2 tbsp Wholemeal Self Raising Flour
  • 1½ tbsp Ground Flaxseed
  • 3 tbsp Water
  • 2 tsp Maple Syrup
  • 1 tbsp Non-Dairy Milk
  • 1 tsp Vanilla Essence
  • 4 tsp Cocoa Powder
  • ½ tsp Baking Powder

METHOD

Step 1

Drain and rinse the black beans, then place in a food processor and process until smooth.

Step 2

Meanwhile, add the ground flaxseed to the water and whisk to combine. Allow to sit and thicken while you prepare the rest of the ingredients.

Step 3

Add the black bean puree to a small bowl, then add the maple syrup, milk and vanilla essence, and whisk to combine.

Step 4

Add the flour, cocoa powder, and baking powder to the bowl and whisk again to combine.

Step 5

Finally, add the flax-egg to the bowl, and stir gently.

Step 6

Place the whole bowl in the microwave for 4-5 minutes, or until cooked to your liking, then dig in!
