Warm Chicken Pesto Pasta Salad

INGREDIENTS
- 640 g Chicken Breast
- 10 tbsp Pesto
- 4 cup Spinach
- 40 whole Cherry Tomatoes
- 2 medium Zucchini
- 2 medium Red Capsicum
- ½ cup Basil Leaves
- 1 serve Salt and Pepper
- 1 serve Extra Virgin Olive Oil
- 8 cup Cooked Wholemeal Pasta
METHOD
Step 1
Halve the cherry tomatoes and roughly chop the zucchinis and capsicums.
Step 2
Bring a large pot of water to the boil and add the pasta. Cook until al dente.
Step 3
While the pasta is cooking, spray olive oil in a frypan and place over a medium heat.
Step 4
Add the chicken to the pan and after a few minutes add in the roughly chopped zucchini and capsicums.
Step 5
When the chicken is cooked through (8-10 minutes) add the cherry tomatoes and spinach.
Step 6
Remove the pan from the heat, then add the pasta and pesto and stir to combine.
Step 7
Season with cracked pepper and fresh basil leaves, divide into four serves, then dig in!
