Tuna, Lemon and Avocado Salad

Tuna, Lemon and Avocado Salad feature image

INGREDIENTS

  • 340 g Canned Tuna in Springwater
  • 3⅓ cup Four Bean Mix
  • ⅔ medium Avocado
  • 20 whole Cherry Tomatoes
  • ½ medium Red Onion
  • 1 medium Cucumber
  • ½ whole Lemon
  • 1 tbsp Cilantro
  • 1 serve Salt and Pepper

METHOD

Step 1

Start by slicing the vegetables.

Step 2

In a large salad bowl, combine the cucumber, avocado, tomatoes, red onion, drained tuna, drained beans, and the cilantro.

Step 3

In a small bowl combine 2 tbsp lemon juice, and salt and pepper to taste. Drizzle over the top of the salad.

Step 4

Toss to combine and serve!
