Summer Pineapple Salad

INGREDIENTS

  • 4 cup Canned Black Beans
  • 3 cup Canned Brown Lentils
  • 2½ tbsp Flaxseeds
  • 2 tbsp Crushed Walnuts
  • 2 cup Chopped Pineapple
  • 4 cup Baby Spinach
  • 2 medium Cucumber
  • 2 medium Tomato
  • 4 tbsp Lemon Juice
  • 1 tbsp Maple Syrup

METHOD

Step 1

Drain and rinse the black beans and lentils.

Step 2

Dice the pineapple, cucumber, and tomato.

Step 3

In a small bowl, whisk together the lemon juice and maple syrup.

Step 4

Take a large bowl, add the beans, lentils, pineapple, spinach, cucumber, tomato and dressing. Toss to combine.

Step 5

Sprinkle with flaxseeds and crushed walnuts, then dig in!
