Smashed Edamame

INGREDIENTS
- 1 cup Edamame
- 1½ tbsp Flaxseeds
- 1 medium Tomato
- 1 medium Cucumber
- 1 clove Garlic
- 1 serve Salt and Pepper
- 3 cafe slices Mixed Grain Bread
METHOD
Step 1
Place the edamame in a microwave safe bowl, add a splash of water, then place in the microwave for approximately 5 minutes or until softened.
Step 2
Meanwhile, toast the bread.
Step 3
Thinly slice the tomato and cucumber, and peel the garlic clove.
Step 4
Remove the edamame from the microwave and place in a food processor or blender with the garlic clove. Pulse until broken down but still chunky.
Step 5
Spread the smashed edamame on the bread, top with tomato and cucumber slices, sprinkle with the flaxseeds and season with salt and pepper to taste, then dig in
