Protein Buckwheat Banana Bread feature image

MAKES 1 LOAF (GF) (DF) (V)

INGREDIENTS

4 medium-sized ripe bananas, mashed
2/3 cup buckwheat flour
2/3 cup almond meal
1/3 cup maple syrup or raw honey
1/3 cup coconut or olive oil
2 eggs
2 tsp cinnamon
2 tsp baking powder
1/4 cup protein powder of your choice (whey, hemp, pea etc.) 1/4 cup milk of your choice (dairy, almond, coconut etc.)

METHOD

Grease and line a standard size loaf tin. Preheat oven to 180C or 165C fan forced.

Whisk together eggs, maple syrup and oil until well combined. Fold through mashed banana.

Add buckwheat flour, almond meal, cinnamon, baking powder and protein powder and mix until just combined then fold in milk.

Pour batter into lined loaf tin and bake for 35-45 minutes or until a skewer comes out clean.

Cool down in tin for 1 hour before transferring to wire rack. Slice and keep in an air tight container in the fridge.
