Keto Fudge Brownies

INGREDIENTS

1/2 cup almond meal
1/4 cup raw cacao
1/2 cup stevia or erythritol
1/2 tsp baking powder
1/2 cup coconut oil, melted
1/3 cup sugar free chocolate, chopped* 2 eggs

METHOD

Line and grease a brownie pan and preheat oven to 180C or 165C fan forced.

In a mixing bowl whisk together almond meal, raw cacao, stevia and baking powder until well combined and there is no lumps.

Beat in eggs, one at a time until batter is smooth.

Place coconut oil and chopped chocolate into a microwave safe bowl and microwave for 30 seconds at a time, stiring in between until melted. Add chocolate and oil to mixture and whisk until combined.

Transfer batter into prepared brownie tin and bake for 20 – 25 minutes or until set. For fudgy brownies, batter will stick slightly to an inserted skewer.

Leave brownies to cool in tray then refrigerate overnight to set before cutting. Keep in an air tight container in the fridge.
**Lindt Dark Chocolate 85% or 90% works best for this recipe.
