Coconut Banana Pancakes

INGREDIENTS

  • 4 whole Eggs
  • 2 medium Banana
  • 1 tbsp Coconut Flakes
  • 1 cup Raspberries
  • 1 tsp Honey

METHOD

Step 1

Mash bananas in a large bowl.

Step 2

Whisk eggs using a fork then add bananas.

Step 3

Add coconut flakes and stir until well combined.

Step 4

Spray a little olive oil in a frypan and place over medium heat.

Step 5

Pour pancake mixture into the pan to create desired size of pancake.

Step 6

Cook until starting to bubble or brown at the sides then flip.

Step 7

Continue to flip until pancake is golden brown and cooked through.

Step 8

Serve topped with raspberries and a little drizzle of honey if desired.
