GREEN + BLACK BEAN TUNA SALAD feature image

Ingredients:
2/3 cup green beans
4 handfuls baby spinach
2/3 cup canned black beans, drained
7/8 cup tuna in water, drained
1 tbsp. olive oil
1 tsp. oregano
1 tbsp. capers
2 tbsp. pumpkin seeds

Recipe:
1) Blanche the green beans for about 5 minutes. Drain and rinse the black beans.
2) Mix the spinach, green beans, tuna, black beans, oregano and olive oil in a bowl.
3) Divide the salad between two bowls, top each with capers and drizzle 1 tsp. of its brine liquid. Season with freshly ground black pepper and sprinkle with the pumpkin seeds to serve.
