Springtime salads are the best! Whip up this delicious Watermelon, Orange and Feta Salad for a light, refreshing twist on a classic fruit salad.
¾ cup chopped watermelon
1 large orange, peel and pith removed, flesh cut into segments
½ cup crumbled feta cheese
¼ cup fresh mint leaves
2 teaspoons extra virgin olive oil
2 teaspoons lemon juice
3 tablespoons cup honey
Coarse salt and ground pepper
- Arrange watermelon, orange, feta cheese and mint. Mix olive oil, lemon juice and honey in a bowl and drizzle over salad. Season with salt and pepper to taste.
