Spiralized Greek Cucumber Salad

1 English cucumber
1 can chickpeas, drained and rinsed
½ cup roasted red peppers
½ cup sliced Kalamata olives
1 cup cherry tomatoes
½ cup crumbled feta cheese
¼ cup chopped red onions


For the dressing:

¼ cup Greek yogurt
3 tablespoons olive oil
1 tablespoon chopped fresh dill
½ teaspoon minced garlic
Salt and pepper to taste



  1. For the dressing: Mix all ingredients together in a bowl until combined.
  2. Spiralize cucumber and add to a large bowl with remaining ingredients. Pour dressing over top and stir to combine.
  3. Season with salt and pepper to taste before serving.
