Kale and Broccoli Salad
Lean, green and tasty
Kale + broccoli.
This combination may not be as popular as chocolate + peanut butter, but believe it or not, it’s a tasty mix that can carry a delicious lunch or dinner. Nutrient rich with a side of sweetness and just the right amount of crunch, you’re going to wonder how you ever went without this combo.
- 1 ¼ cup (125g) kale
- 1 ¼ cup (125g) mixed salad leaves
- 1 tbsp. olive oil
- ½ head broccoli
- ¼ cup (30g) of raisins
- ¼ cup (30g) almonds, roasted and chopped
For the dressing:
- 2 tbsp. lemon juice
- 1 tbsp. honey
- 1 tbsp. balsamic vinegar
- 1 tbsp. almond butter
Preheat oven to 400°F (200°C).
Start by placing the broccoli florets on a baking tray, then drizzle with olive oil and season with salt and pepper. Cook the broccoli first in the oven - 15-20 mins until its soft, add the kale in during the last 10 mins of cooking.
Place broccoli, kale and salad leaves in a mixing bowl and add in the almonds and raisins. Mix gently.
Make the dressing by mixing all the ingredients and drizzle the salad. Make sure to mix well before serving.
