Fall is a great season not just for the beautiful weather and football, but for all of the incredible flavors! This autumn spice trail mix is the perfect snack to pair with a warm apple cider on a chilly October day while you enjoy the changing leaves!
2⁄3 cup raw cashews
1⁄3 cup shelled pistachios
1⁄3 cup pumpkin seeds or pepitas
1⁄3 cup pecan halves, lightly chopped
1⁄3 cup dried cranberries
1⁄3 cup dried apricots
3 Tbsp pure maple syrup
2 Tbsp unsweetened apple juice
1⁄2 tsp vanilla extract
2 tsp ground cinnamon
1⁄2 tsp ground ginger
1⁄2 tsp ground nutmeg
1⁄4 tsp ground cloves
1⁄4 tsp allspice
1⁄2 tsp salt
- Preheat the oven to 300°F. Line a baking sheet with parchment paper and set aside. - In a medium mixing bowl, toss together cashews, pistachios, pumpkin seeds and pecans. in a small bowl, whisk together maple syrup, apple juice, vanilla extract, salt, and all the spices. Pour maple spice mixture over the nuts and toss to coat well.
- Pour the nut mixture onto the baking sheet and spread evenly in one layer. Bake for 30-35 minutes, stirring halfway through, until almost all of the liquid has evaporated or been absorbed. Remove from the oven and allow to cool completely, then add the dried cranberries and apricots and toss to evenly distribute.
- Store in an airtight container in a cool, dry place.
