Healthy Christmas pudding recipe

  • 0.5 lemon, zest
  • 300g luxury mixed dried fruit
  • 4 tbsps brandy or rum or beer
  • 1 tsp mixed spice
  • 50g fresh granary breadcrumbs
  • 2 tsps gravy browning
  • 100g carrot, grated
  • 100g cooking apple, grated
  • 2 eggs, beaten
  • 2 tbsps molasses
  • 75g plain flour
  • 0.5 tsps ground cinnamon
  • 50g dark brown sugar
  • 0.5 orange, zest
  • 1 tbsp lemon juice
  • 4 tbsps skimmed milk
  • 4 tbsps brandy, for reheating


1.Soak the fruit in the alcohol overnight.
2.The next day, put the fruit in a large mixing bowl. Add the remaining ingredients one at a time, mixing well.
3.Spoon the mixture into 1.2 litre pudding basin and cover with clingfilm.
4.To steam the pudding, cover with foil, place in a steamer and steam gently for 3 hours. To reheat, pour the 4 tbsps brandy over the pudding and steam for 1-2 hours.
5.To microwave the pudding, remove the clingfilm and place an upturned plate on top of the bowl. Cook on high for 5 minutes, allow to stand for 5 minutes, then cook for a further 5 minutes.
6.To reheat, pour the 4 tbsps brandy over the pudding and cook on high for 5 minutes.
