LOOKING FOR A PERFECT ALTERNATIVE TO THE NORMAL CHILLI?
INGREDIENTS
- 6 cup Canned Black Beans
- 6 cup Canned Kidney Beans
- 2 medium Avocado
- 2 large Carrot
- 4 cup Baby Spinach
- 1 medium Capsicum
- 4 cup Crushed Tomato
- 1 medium Onion
- 4 clove Garlic
- 2 tsp Smoked Paprika
- 1 serve Salt and Pepper
- ½ tsp Cayenne Pepper
- 5 tsp Extra Virgin Olive Oil
METHOD
Step 1
Grate the carrots, finely dice the onion and capsicum, and crush the garlic.
Step 2
Heat the olive oil in a large pan over a medium-high heat.
Step 3
Add the onion, garlic, smoked paprika and cayenne pepper to the pan and cook until the onion is translucent.
Step 4
Drain and rinse the black beans and kidney beans, then add to the pan.
Step 5
Cook for 2-3 minutes, then add the capsicum, carrot and crushed tomatoes.
Step 6
Reduce the heat slightly and allow to reduce for 10-15 minutes. Season with salt and pepper to taste.
Step 7
Meanwhile, mash the avocado.
Step 8
Divide the spinach between 4 bowls or containers, then top with even serves of vegan chilli. Finish each with a dollop of mashed avocado, then enjoy!
