Tasty Tofu Burger
- 340 g Firm Tofu
- 1 medium Cucumber
- 2 cup Baby Spinach
- 1 cup Mushrooms
- 1 medium Tomato
- ½ small Eggplant
- 2 tbsp Tomato Sauce
- 1 tsp Smoked Paprika
- 1 tsp Extra Virgin Olive Oil
- 1 serve Salt and Pepper
- 4 cafe slices Mixed Grain Bread
- 1⅔ medium White Potato
Preheat oven to 180°C/360°F, and line an oven tray with baking paper.
Slice the potato into wedges then place on the baking tray and bake for approximately 30 minutes or until golden.
Slice the tofu into 2 patties and the eggplant into thin slices. Toss with the smoked paprika, extra virgin olive oil, and some salt and pepper to taste.
Take a fry pan and place over a medium heat. Add the tofu and eggplant, then fry on each side for 2-3 minutes, or until golden.
Meanwhile, slice the cucumber, mushrooms, and tomato. Toast the bread.
Assemble your burgers by laying the tofu and eggplant on the bread, followed by some spinach leaves, sliced vegetables, and tomato sauce. Top with another slice of bread, serve with a side of potato wedges, and then dig in!
