 Spiced Apple & Chai Bircher Muesli Jar

SERVES 2 (DF) (V) (VEGAN)

INGREDIENTS
FOR THE STEWED APPLES
1 large granny smith apple, diced into small cubes 1 tsp maple syrup
1/4 tsp ground cinnamon
2 tbs water

FOR THE BIRCHER MUESLI
1 large granny smith apple, grated

90g steel cut oats (you can use quinoa or buckwheat for GF option) 125ml coconut water
130g coconut yoghurt
25g slivered almonds
25g shredded coconut
1 tsp chai powder*
1 tbs maple syrup

METHOD

To make stewed apples combine diced apples, maple syrup, cinnamon and water in a small saucepan. Place over a low heat and simmer for 10-15 minutes until apples become soft and start to break down.

To make bircher muesli combine all remaining ingredients into a bowl and leave overnight to soak.

Use two glass jars or cups and divide bircher muesli between them. Spoon stewed apples on top of the bircher and dust with some cinnamon or extra chai powder.

**Make sure your chai powder doesn’t contain any hidden sugars! We used Naked Paleo Reishi Chai Powder.
