Protein Packed Quinoa Salad

- 240 g Lean Beef
- 3⅓ cup Cooked Quinoa
- 20 whole Cherry Tomatoes
- 1 medium Cucumber
- 1 medium Capsicum
- 1 cup Spinach
- 1 serve Salt and Pepper
- 1 clove Garlic
- 2 tbsp Red Wine Vinegar
- 5 tsp Extra Virgin Olive Oil
- 2 tsp Honey
Cook the quinoa as per packet instructions.
Season both sides of beef steaks with salt and pepper.
Spray some olive oil in a frypan and place over medium-high heat.
Add the steaks to the pan and cook for 3 to 4 minutes each side (or until cooked to your liking).
Place the steaks on a plate, cover loosely with foil and set aside for 10 minutes to rest.
For the dressing, mince the garlic then combine with the vinegar and honey in a small bowl and mix. Add the oil and mix again.
Halve cherry tomatoes and thinly slice cucumber and capsicum. Place in a large bowl with the spinach and quinoa and toss to combine.
Cut the steaks across the grain into 1cm-thick slices and place on top of the salad.
Drizzle the dressing over the top and season with more salt and pepper if desired, then enjoy!
