Harissa Spiced Chickpea Salad

INGREDIENTS

  • 2 cup Edamame
  • 7 cup Canned Chickpeas
  • 2 large Tomato
  • 1 medium Cucumber
  • ½ medium Red Onion
  • ¼ cup Coriander
  • ¼ cup Parsley
  • 1 tbsp Harissa Paste
  • ½ whole Lemon
  • 2 medium Avocado

METHOD

Step 1

Finely dice the avocado, tomato, cucumber and red onion and roughly chop the fresh herbs.

Step 2

Add the chickpeas, edamame, and veg to a bowl and mix well.

Step 3

Add the harissa paste and gently stir through.

Step 4

Squeeze some lemon juice over the top.

Step 5

Serve with protein of your choice - Greek style lamb, lemon chicken or add another serve of legumes for a vegetarian option.
