Cod and Sweet Potato Mash with Goats Cheese

DELICIOUS WINTER WARMER FOR THE WHOLE FAMILY!
INGREDIENTS
- 180 g Blue Eye Cod Fillet
- ¼ cup Goats Cheese
- 1 medium Tomato
- 1 bunch Broccolini
- 1 tbsp Fresh Thyme
- 1 wedge Lemon
- 1 medium Sweet Potato
METHOD
Step 1
Preheat the oven to 180°C/360°F.
Step 2
Place the cod on a baking try lined with a aluminium foil.
Step 3
Slice the tomato and chop the broccolini.
Step 4
Place tomato slices and goats cheese on top of the cod and garnish with thyme leaves.
Step 5
Fold up the sides of the aluminium foil and then the ends, sealing the fish.
Step 6
Place in the oven for 10-12 minutes.
Step 7
Roughly chop the sweet potato.
Step 8
Half fill a saucepan with water and bring to the boil.
Step 9
Add the sweet potato and cover. After 10 minutes add broccolini and boil for a further 2 minutes.
Step 10
Strain the vegetables, put broccolini to the side and place sweet potato in a bowl. Season with salt and pepper and mash with a fork
Step 11
Remove the cod from the oven. Open the foil and check if the fish has started to flake by gently scraping with a fork.
Step 12
Serve the fish with sweet potato mash, broccolini and a wedge of lemon. Enjoy!
