Chips with Guac and Pumpkin
- 20 g Plain Corn Chips
- 2 tbsp Guacamole
- 1 cup Diced Butternut Pumpkin
- 1 serve Salt and Pepper
Start by finely dicing the pumpkin, then adding to a microwave safe bowl with a dash of water.
Microwave for 5-10 minutes, or until softened depending on your microwave.
Remove from the microwave and drain, then mash using a fork. Add salt and pepper to taste.
Serve corn chips with a bowl of guacamole and a bowl of pumpkin mash for dipping, and enjoy!
