Ultimate Veggie Burger

INGREDIENTS FOR THE BURGERS

4 large field mushroom cups
4 red onion rings, 5mm thick
4 slices tomato
lettuce leaves of your choice (rocket, iceberg, butter etc.)
4 tbs sauce of your choice (coconut yoghurt, tahini or tomato relish goes

great)

FOR THE PATTIES (MAKES 2 PATTIES)

1/2 can chickpeas, drained and rinsed
1 tbs chia seeds + 3 tbs water
1 cup roasted sweet potato, chopped and cold
1 tsp smoked paprika
salt and pepper + olive oil for frying

METHOD

To make the patties mix together chia seeds and water in a small bowl and set aside to thicken.

In a mixing bowl add cold roasted sweet potato and crush with a fork. Add chickpeas, smoked paprika, salt, pepper and chia seed mixture and mix well until thoroughly combined. Shape mixture into 2 burger patties. Heat 2 tablespoons of olive oil in a fry pan and fry patties for 3 minutes on each side.

Preheat oven to 180C or 165C fan forced. Place mushroom cups on a baking tray, drizzle with olive oil and bake for 5-8 minutes or until they begin to soften – you still want them to hold their shape.

To assemble the burgers use one mushroom cup as the base and layer lettuce, tomato, onion, sweet potato patty then your favourite sauce on top. Use another mushroom cup to top the burger and secure with a skewer to keep everything in place.
