Tuna and Cucumber Sushi

INGREDIENTS
- 200 g Tuna Fish
- 1 cup Cooked Brown Rice
- 4 whole Seaweed Sheets (nori)
- ½ whole Red Onion
- 1 whole Cucumber
- 1 cup Red Cabbage
- ½ whole Capsicum
- 1 heaped tbsp Reduced Fat Mayonnaise
- ½ cup Tamari Sauce
METHOD
Step 1
Cook rice as per packet instructions. Place in a bowl, add half the tamari and stir through.
Step 2
Thinly slice cucumber into long sheets, finely slice cabbage and capsicum and finely dice red onion.
Step 3
Drain liquid from canned tuna and place in a bowl. Add red onion and mayonnaise and stir.
Step 4
Place seaweed sheet on the bench (or use a damp bamboo sushi mat if you have one).
Step 5
Place one strip of cucumber, a little cabbage, capsicum, rice and 2 tablespoons of tuna mixture onto seaweed sheet.
Step 6
Roll to create a tight crisp sushi roll and use a sharp knife to cut in half or several pieces.
Step 7
Repeat with remaining nori, rice, veg and tuna mixture and serve with tamari sauce for dipping.
