Sweet Potato Boats
small sweet potatoes, skin on and washed (12cm – 15cm long)
Preheat oven to 200C or 180C fan forced.
Using a fork, prick holes in sweet potato all over (this is to stop them from exploding!).
Wrap in foil and place directly on oven rack. Bake for 45 – 60 minutes or until entire sweet potato is tender.
Remove from foil and leave to cool for 10 minutes.
Make an incision down the middle of the sweet potato length ways then open slightly to create a space to fill.
Pick a topping below and load up your boat for a quick and tasty meal.

Load up your sweet potato with some rice and beans, salsa, coconut yoghurt and of course some guacamole!

Crack an egg into your sweet potato boat and return to the oven until it’s cooked. Top with some crispy bacon and avocado.
TOMATO & CHICKPEA (GF) (DF) (V) (VEGAN)
Mix together a can of washed and rinsed chickpeas, 1/2 cup tomato passata and 1 teaspoon of smoked paprika. Spread onto a baking tray and bake for 20 minutes or until bubbly and golden then load up your boat.
