Sweet Potato and Feta Omelette
Give this omelette combination a try!
- 6 large Eggs
- 560 g Sweet Potato
- ½ cup Feta Cheese
- 1 large Tomato
- 1 medium Capsicum
- 1 cup Mushrooms
- 1 cup Spinach
- 1 clove Garlic
- 2 wedge Lemon
- ¼ cup Basil Leaves
- 1 serve Extra Virgin Olive Oil
- 1 serve Salt and Pepper
Mince the garlic, chop the sweet potatoes into small cubes, and roughly chop capsicum, mushroom and tomato.
Spray a frypan with olive oil, add the garlic and saute for 1 minute.
Add the sweet potato and saute for another 4-5 minutes.
Add remainder of vegetables and saute for a further 3-4 minutes.
Whisk the eggs in a bowl and season with salt and pepper to taste.
Pour the eggs into the pan and crumble the feta over top. Allow to sit and cook.
Turn the omelette once base has sealed and carefully remove from the pan when cooked through.
Garnish with fresh basil leaves and serve with a wedge of lemon.
