Steak, Sweet Potato Mash and Salad
- 160 g Beef Medallions
- 2 cup Rocket
- 10 whole Cherry Tomatoes
- ½ medium Red Onion
- ½ whole Lemon
- 1 serve Extra Virgin Olive Oil
- 1 serve Salt and Pepper
- 1⅓ large Sweet Potato
- 1 medium Avocado
Pre-heat oven to 180°C/360°F.
Roughly chop the sweet potato.
Fill a saucepan to about half way with water and bring to the boil.
Add the sweet potato, cover and boil for 10-12 minutes.
Strain the sweet potato, place in a bowl, season with salt and pepper and mash with a fork.
Spray some olive oil in a frypan and place over high heat.
Season the beef with salt and pepper to taste. When the pan is hot, sear the medallions for a minute either side, then transfer to the oven to finish cooking - approximately 8 minutes.
Halve the cherry tomatoes and finely chop the red onion. Transfer to a bowl and add the rocket. Top with sliced avocado and a squeeze of lemon.
Serve the beef and sweet potato mash with simple side salad, and enjoy!
