Looking for an alternative to the traditional scrambled eggs?
- 160 g Firm Tofu
- ⅓ medium Avocado
- 1 cup Mushrooms
- 1 cup Baby Spinach
- ½ medium Onion
- ½ medium Capsicum
- 1 tsp Turmeric
- 1 serve Salt and Pepper
- 3 cafe slices Mixed Grain Bread
Finely slice the onion, capsicum, avocado, and mushrooms.
Heat a non-stick fry pan over a medium heat, then add the onion, capsicum, and mushrooms. Saute for 2-3 minutes.
Take the firm tofu and use your fingers to crumble it into the pan.
Add the turmeric and stir until the tofu is well coated, then add the spinach and stir until wilted. Continue to cook until the tofu begins to brown, then remove from the heat.
Meanwhile, toast the bread.
Spread the avocado over the toasted bread, them top with scrambled tofu.
Season with salt and pepper to taste, then dig in!
