Protein Packed Nourish Bowl
- 4 whole Eggs
- 340 g Sweet Potato
- 1 cup Baby Carrots
- 1 cup Green Beans
- 1 cup Cauliflower Florets
- 1 cup Spinach
- 1 serve Extra Virgin Olive Oil
Steam, blanch or lightly saute vegetables.
While vegetables are cooking place eggs in a saucepan of cold water over medium heat.
Bring to a gentle simmer and stir the eggs constantly.
Simmer for 4 minutes for soft-boiled eggs, 5 minutes for semi-firm yolks and hard whites and 8 minutes for hard-boiled eggs.
Use a slotted spoon to remove the eggs from the water.
Assemble eggs and vegetables in a bowl, drizzle a little olive oil over the top and season with salt and pepper.
