Mediterranean Vegetable Burger
- ½ whole Red Onion
- 1 whole Tomato
- 1 whole Cucumber
- ½ cup Greek Yoghurt
- ¼ whole Lemon
- 1 clove Garlic
- 1 tbsp Fresh Dill
- 1 serve Salt and Pepper
- 4 thin slice Gluten Free Bread
- 2 whole Gluten Free Vegetable Burger Patty
Spray a frypan with a little olive oil and place over medium heat.
Cook veggie patties as per packet instructions, usually a couple of minutes each side or until cooked through and golden brown.
Deseed, finely grate and strain 1/2 the cucumber then stir into the greek yoghurt.
Add lemon juice, finely diced garlic, chopped dill, 1/2 tsp salt (add more to taste) and 1/8 tsp black pepper, stir until well combined.
Slice remaining cucumber, tomato and red onion.
Make your burger! Place veggie burger onto bread, top with sliced vegetables, garnish with tzatziki sauce and serve!
