Easy Omelette, Feta and Lemon with Toast
- 1 whole Egg
- 3 whole Egg Whites
- 40 g Feta
- 1 whole Tomato
- ½ whole Capsicum
- ½ cup Spinach
- 1 tbsp Spring Onions
- 1 wedge Lemon
- 1 thick slice Gluten Free Bread
Finely dice spring onions, tomato and capsicum
Spray a little olive oil in a frypan and place over low heat-medium heat. Add vegetables to the pan and sauté for a 4-5 minutes.
While vegetables are cooking combine egg and egg whites in a bowl. Whisk lightly with a fork until combined.
Pour egg mixture into the pan over the vegetables, turn the heat down low and cover.
Turn omelette once base has sealed and carefully remove from the pan when cooked through.
Sprinkle feta over the top, season with a little salt and pepper and serve with toast and a wedge of lemon.
