Corn Chips with Fresh Veg Salsa

INGREDIENTS

  • 1¼ cup Plain Corn Chips
  • 1 tbsp Chia Seeds
  • ½ medium Tomato
  • ½ medium Cucumber
  • ½ medium Red Onion
  • 1 cup Baby Spinach
  • 2 tbsp Lime Juice
  • 1 serve Salt and Pepper

METHOD

Step 1

Dice the tomato, cucumber, red onion, and spinach, then add them all to a bowl.

Step 2

Add the lime juice, chia seeds, and salt and pepper to taste, then stir to combine.

Step 3

Enjoy by scooping a little salsa onto each corn chip, and enjoy!
