Cod with Quinoa and Mediterranean Vegetables
- 360 g Cod Fillets
- 1 small Red Onion
- 2 clove Garlic
- 3 cup Green Beans
- 20 whole Cherry Tomatoes
- ½ cup Artichoke Hearts
- 1 whole Lemon
- 1 tsp Dried Marjoram
- ½ tsp Chilli Flakes
- 1 serve Salt and Pepper
- 2⅔ cup Cooked Quinoa
- 6 tsp Crushed Macadamia
Cook the quinoa as per packet instructions and set aside.
Halve the cherry tomatoes and finely chop the onion and garlic.
Spray some olive oil in a small frypan and place over medium heat.
Add the onion, garlic and chilli flakes and fry for 2 minutes.
Add the green beans, tomatoes and artichoke and toss.
After 2 minutes squeeze the juice of half a lemon over the vegetables and season with salt and pepper to taste.
After another 2 minutes add 1/2 cup water and stir.
Season both sides of cod with some more lemon juice and then place on top of the vegetables in the pan.
Cover the pan and reduce the heat to low-medium for approximately 6-8 minutes or until cooked through.
Transfer the cod to a plate.
Stir the marjoram into vegetables and cook for a further 1-2 minutes.
Place the cod over the quinoa and spoon the vegetables mix over the top.
Serve with a slice of lemon, and enjoy!
